Franklin Barbecue, a renowned barbecue eatery situated in Austin, had its beginnings in 2009 when Aaron Franklin launched the restaurant from a trailer. Notably, the restaurant has consistently sold out of its brisket since its inception. It wasn't long before Franklin Barbecue made a move to a permanent brick and mortar location in 2011.

The restaurant gained further recognition when it was featured on the television show "Anthony Bourdain: No Reservations" in September 2012. Subsequently, in 2014, it earned a spot on Texas Monthly's list of "the 50 Best BBQ Joints in the World." The restaurant also received a visit from President Barack Obama in July of that year, where he purchased lunch for those waiting in line behind him. Additionally, Franklin Barbecue had a prominent presence in the 2014 Jon Favreau film "Chef," with owner Aaron Franklin and general manager Benji Jacob making speaking appearances.

In May 2015, Aaron Franklin, the owner of Franklin Barbecue, received the prestigious James Beard Foundation Award for Best Chef: Southwest, marking a significant milestone as the first chef specializing in barbecue to be nominated for or win this esteemed award.

However, in the early hours of August 26, 2017, a fire occurred in the smoke house section of the restaurant, causing substantial damage to parts of the exterior building. Fortunately, the primary dining area only suffered from smoke damage.
